Kölsch Kölsch / 4.5 ABV / 22.0 IBU / Bellingham, WA In the city of cologne they drink and brew kolsch beer and the brewers’ guild has protected it since 1254. Kölsch is a top-fermented ale / a throwback to the days before lagers took over the germanic world. Kölsch offers the simple pleasures of a well crafted beer. It is very pale / the aromatics are a light mélange of hops / malt / and fruit. The kölsch beer maintains a bitterness that is quite restrained / although the palate is light-bodied and bone-dry / with a soft malt flavor in the center giving way to a drying / slightly acidic finish. Smoothness is conferred by one to two months of cold conditioning. Kölsch makes an excellent replacement for stella artois beer drinkers! Quilter's Irish Death Strong Ale - Other / 7.8 ABV / 12.0 IBU / Ellensburg, WA Created by the brewery’s founder / quilter’s irish death is what we call a dark / smooth ale. Any attempt at classifying it just ends up sending beer geeks into a style guidelines diatribe. So forget style guidelines. Is your pursuit of micro beer about tasting copies of a style that fit guidelines anyways? (neither is ours) we lovingly refer to it as beer candy. While tempting to session this beer / the name is a necessary reminder that despite the surprising approachability / this beer weighs in at a hefty 7.8% abv. 16oz Draft 8
